Caprese Chicken Sandwich

A good lunch sandwich should be quick enough for a busy day but flavorful enough that you actually look forward to eating it.

This Caprese Chicken Sandwich does both.

Inspired by the classic Italian combination of tomato, mozzarella, and basil, this sandwich adds juicy seasoned chicken and a drizzle of balsamic glaze before piling everything onto warm, lightly toasted ciabatta.

The result is a satisfying combination of crisp bread, tender chicken, creamy mozzarella, juicy tomatoes, fragrant basil, and sweet-tangy balsamic.

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Servings: 4

Ingredients

For the Chicken

  • 4 thin chicken breast cutlets, about 600 g total
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp freshly ground black pepper

For the Sandwiches

  • 4 ciabatta rolls
  • 250 g (8 oz) fresh mozzarella, sliced
  • 2 large ripe tomatoes, sliced
  • Large handful fresh basil leaves
  • 2 tbsp balsamic glaze
  • 1 tbsp extra-virgin olive oil
  • Arugula or mixed greens, optional

Instructions

Season the chicken

Pat the chicken dry with paper towels.

Rub with olive oil, garlic, Italian seasoning, salt, and freshly ground black pepper.

If your chicken breasts are particularly thick, slice them horizontally or gently pound them to an even thickness.

Cook the chicken

Heat a grill pan or large skillet over medium-high heat.

Add the chicken and cook until beautifully golden on both sides and completely cooked through.

Depending on thickness, this will usually take approximately 4–6 minutes per side.

Chicken should reach 74°C (165°F) internally.

Transfer to a plate and allow it to rest briefly.

Toast the ciabatta

Slice the ciabatta rolls through the middle.

Place them cut-side down in a skillet or under the broiler for a couple of minutes until lightly golden.

Toasting helps the bread hold up against the juicy tomatoes and mozzarella.

Prepare the toppings

Slice the tomatoes and fresh mozzarella.

Pat the mozzarella gently with a paper towel if it’s particularly wet.

Wash and dry the basil leaves.

Assemble the sandwiches

Drizzle a small amount of extra-virgin olive oil over the bottom half of each toasted roll.

Add the cooked chicken.

Layer fresh mozzarella and tomato slices over the chicken.

Add plenty of fresh basil and optional arugula.

Add the balsamic glaze

Drizzle balsamic glaze over the mozzarella and tomatoes.

Add freshly ground black pepper if desired.

Place the remaining ciabatta half on top and gently press the sandwich together.

Serve

Serve immediately while the chicken is warm and the bread is still crisp.

For easier eating, cut each sandwich diagonally through the center.

Tips for the Best Caprese Chicken Sandwich

Choose good tomatoes. Because tomatoes are one of the main flavors, ripe seasonal tomatoes make a noticeable difference.

Use fresh mozzarella. The soft, milky texture is an important part of the Caprese combination.

Toast your bread. This provides texture and helps prevent sogginess.

Don’t skip the basil. Fresh basil gives this sandwich its distinctive Caprese flavor.

Rest the chicken. Give it a few minutes after cooking before slicing to help retain its juices.

Easy Variations

Pesto Chicken Caprese Sandwich

Spread basil pesto over the ciabatta before adding the chicken.

Spicy Caprese Sandwich

Add chili flakes or sliced hot peppers.

Avocado Caprese Chicken Sandwich

Add sliced avocado for another creamy layer.

Caprese Panini

Assemble the sandwich and cook it in a panini press until the bread is crisp and the mozzarella begins to melt.

What to Serve With It

Pair your Caprese Chicken Sandwich with tomato soup, a green salad, roasted vegetables, potato wedges, sweet potato fries, or fresh fruit.

For a lighter lunch, a small side salad with lemon and olive oil works especially well.

Meal Prep

The chicken can be cooked up to 2–3 days ahead and kept refrigerated.

Prepare the tomatoes, mozzarella, and basil separately.

Assemble the sandwiches shortly before serving rather than storing them fully assembled overnight. Fresh mozzarella and tomatoes contain plenty of moisture and can eventually make the bread soggy.

Storage

Store leftover cooked chicken in an airtight container in the refrigerator for up to 3 days.

Fresh mozzarella and sliced vegetables should be refrigerated separately.

For the best texture and flavor, assembled Caprese sandwiches should be eaten shortly after preparation.

Final Note

With golden chicken, creamy mozzarella, ripe tomatoes, fresh basil, and balsamic glaze packed inside toasted ciabatta, this Caprese Chicken Sandwich turns simple ingredients into a flavorful lunch.

It’s ready in around 25 minutes, easy to customize, and perfect when you’re looking for something fresher than an ordinary sandwich.
