Ingredients
- 8 bone-in, skin-on chicken thighs
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp onion powder
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp chili flakes, optional
- Juice of 1 lemon
- Fresh parsley for garnish
Instructions
Preheat the oven: Heat your oven to 200°C (400°F). Line a baking dish or sheet pan with parchment paper or lightly grease it.
Prepare the seasoning: Combine olive oil, garlic, paprika, oregano, thyme, onion powder, salt, black pepper, chili flakes, and lemon juice.
Season the chicken: Pat the chicken thighs thoroughly dry with paper towels. Rub the seasoning mixture over both sides.
Bake: Arrange the thighs skin-side up, leaving a little space between each piece. Bake for approximately 35–40 minutes, until beautifully browned and the thickest part reaches at least 74°C (165°F).
For even crispier skin, broil for the final 2–3 minutes while watching carefully to prevent burning.
Rest and serve: Allow the chicken to rest for 5 minutes. Garnish with fresh parsley and serve with roasted potatoes, green beans, rice, or a fresh salad.
