Classic Homemade Shepherd’s Pie

Few dishes say comfort food quite like a warm Shepherd’s Pie fresh from the oven.

Underneath its golden layer of fluffy mashed potatoes is a hearty filling of seasoned ground lamb, carrots, peas, onions, and herbs simmered in a savory sauce. Everything is baked together until bubbling around the edges and lightly crisp on top.

Traditionally, Shepherd’s Pie is prepared with lamb. If you substitute ground beef, the dish is more accurately called Cottage Pie—but both versions are delicious.

Prep Time: 20 minutes
Cook Time: 40 minutes
Total Time: 1 hour
Servings: 6

Ingredients

For the filling:

  • 500 g (1 lb) ground lamb
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 1 cup (150 g) frozen peas
  • 2 tbsp tomato paste
  • 1 cup (240 ml) beef or lamb broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and black pepper to taste
  • 1 tbsp olive oil

For the mashed potato topping:

  • 1 kg (2.2 lb) potatoes
  • 4 tbsp butter
  • ¼ cup (60 ml) milk or cream
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

Prepare the mashed potatoes

Peel the potatoes and cut them into evenly sized chunks.

Place them in a large saucepan, cover with salted water, and bring to a boil. Cook until the potatoes are completely tender when pierced with a fork.

Drain well before adding the butter and milk.

Mash until creamy and smooth. Season with salt and black pepper, then set aside.

Brown the meat

Heat the olive oil in a large skillet over medium-high heat.

Add the ground lamb and cook until browned, breaking it into smaller pieces with a wooden spoon as it cooks.

Drain excess fat if necessary.

Add the vegetables

Add the chopped onion and carrots to the skillet.

Cook for approximately 5 minutes until they begin to soften.

Stir in the minced garlic and cook briefly until fragrant.

Build the savory filling

Stir the tomato paste into the meat and vegetables and cook for about a minute.

Pour in the broth and Worcestershire sauce.

Add the thyme, rosemary, salt, and black pepper.

Reduce the heat and allow the mixture to simmer gently for around 10 minutes, stirring occasionally, until the sauce has thickened.

Stir in the frozen peas during the final few minutes.

Assemble the Shepherd’s Pie

Preheat the oven to 200°C (400°F).

Transfer the meat mixture to a baking dish and spread it into an even layer.

Spoon the mashed potatoes over the filling and carefully spread them all the way to the edges.

Run a fork across the surface to create small ridges. These raised areas become beautifully golden during baking.

Bake until golden

Bake for approximately 20 minutes, or until the filling is bubbling and the potato topping has developed golden patches.

For an even more browned top, place it under the broiler for a minute or two at the end, watching it carefully.

Rest and serve

Allow the Shepherd’s Pie to rest for about 5–10 minutes before serving. This helps the filling settle and makes individual portions easier to serve.

Finish with freshly chopped parsley.

Tips for the Best Shepherd’s Pie

Let the meat filling thicken sufficiently before assembling the pie. A watery filling can make the finished dish difficult to serve.

Drain the potatoes thoroughly before mashing them so the topping remains fluffy rather than watery.

For an extra-rich potato topping, add a little grated cheddar or Parmesan before baking.

Easy Variations

You can add corn, mushrooms, celery, or additional carrots to the filling.

For a cheesy version, sprinkle shredded cheddar over the mashed potatoes before putting the dish in the oven.

And if lamb isn’t available, ground beef makes an excellent alternative—technically turning the recipe into Cottage Pie.

Storage and Reheating

Store leftovers covered in the refrigerator for up to 3 days.

Individual portions can be reheated in the microwave, while larger amounts are best reheated covered in the oven until thoroughly hot.

Shepherd’s Pie is also an excellent make-ahead meal. Assemble it earlier in the day, refrigerate, and bake when you’re ready for dinner.

Final Note

With its rich meat-and-vegetable filling and generous layer of creamy mashed potatoes, Classic Shepherd’s Pie is the kind of homemade dinner that’s especially satisfying on a cool evening. Simple ingredients come together to create a hearty meal the whole family can enjoy.
